I'm not using OS X so the following are just some remarks:

IRC using OpenOCD with an FTDI FT2232-based JTAG-interface (Amontec
jtagkey, Olimex USB ARM JTAG, Signalizer etc.) on MacOS X has been
discussed either in the OpenOCD forum at sparkfun or the OpenOCD
developer mailing list at berlios. If not the forum/list might be a
better place to ask. Since FTDI provides drivers for OS X and it should
be possible to compile OpenOCD for this System.

If you have some funds you may go with a "Ethernet to JTAG" Interface
(which is much more than a "cable") that provides a gdb-server "over
TCP/IP" (Peedi, BDI2000).
